Chocolate cherry brownies

A chocolate brownie has become synonymous with indulgence. Listed on many a menu, the humble chocolate treat has become a classic. The variations are endless but for me, I like the combination of the rich unctuous flavour of dark chocolate paired with the sharp tartness of cherries. Once you whip up this recipe it will become a classic in your very own kitchen.

Chocolate cherry brownies – makes 16
Ingredients
250g butter
200g dark chocolate
1 teaspoon instant coffee
1 teaspoon vanilla extract
170g brown sugar
130g caster sugar
4 eggs
40g cocoa powder
180g plain flour
200g cherries, pitted and halved
Method:
Preheat oven to 180 degrees
Place chocolate and butter in a bowl and place on a double boiler
Cook on medium heat until butter and chocolate are melted
Take off the heat and add coffee and vanilla
Mix in both sugars, followed by the eggs
Leave to cool slightly and fold in the flour and cocoa powder until smooth
Lastly, add your pitted cherries
Pour into muffin moulds until two-thirds fill
Bake for 22 minutes
Leave to cool and serve with a dollop of crème Fraiche
