Peppermint pudding ice cream sandwiches

One of the biggest food trends globally this year has to be newstalgia. Taking nostalgic dishes especially from the 80s and 90s and jazzing them up a little (I hear Jazz on the upswing too)

These little frozen morsels are summer/ Christmas holidays personified in my humble opinion. The classic peppermint crisp pudding that we all love and grew up with gets a reincarnation in ice cream sandwich form. Children and adults alike will inhale these nostalgic desserts with equal amounts of joyous gluttony.   



Peppermint pudding ice cream sandwiches – makes 12

 

Peppermint pudding ice cream

1 360g tin of caramel treat

360 ml whipping cream

1 peppermint crisp chocolate, grated

 

2 x 400g puff pastry rolls, thawed overnight in the fridge

 

Method

Ice cream

  • Whisk together the caramel treat and cream together until thick but still pourable, fold through the peppermint crisp through 

  • Pour into 12 7cm ring moulds and leave to set 

 

Puff pastry

  • Preheat your oven to 200 degrees Celsius 

  • Roll out the pastry slightly 

  • Place the pastry between two baking trays using baking paper on the top and bottom of the pastry. You basically want to ensure the puff pastry doesn’t puff up too much as you want thin pastry to sandwich the ice cream

  • Bake until golden 

  • Cut 24 7cm pastry rounds

Assembly

Place a portion of the ice cream in between two puff pastry rounds and place in the freezer to store
