The classic “pick-me-up” dessert is perfect in any form it takes—be it ice cream, beautifully traditional, or even in mini tart form, it hits all the right notes. I chose a buttery pastry shell to showcase my tiramisu, as it’s relatively dainty and serves as a subtle carrier of the coffee flavour without overpowering it.

Tiramisu tarts - serves 6
Sweet pastry
187g flour
57g caster sugar
130g butter
1 egg yolk
Tiramisu
240ml whipping cream
150g mascarpone
45ml amarula
40g caster sugar
12ml, espresso
Garnish
Cocoa powder
chocolate curls
Method
Sweet pastry
● Mix the flour, caster sugar & mascarpone. together
● Rub in the butter, then add the egg
● Mix until a dough forms, cling film and chill for 30 minutes
● Roll the pastry to a thickness of 3mm.
● Cut 8cm rounds and line 6 mini tart tins
● Bake the pastries blind at 180 degrees for 20 minutes or until baked and golden
Tiramisu
● Whisk together cream, sugar and mascarpone until thick.
● Fold in the Amarula and espresso
● Pipe the filling into each tart case right to the top and smooth the tops using an offset spatula
● Leave to chill in the fridge
● Remove the tarts from the fridge
● Place a card on top of the tart, leaving half the tart uncovered
● Dust evenly with cocoa powder and garnish with chocolate curls
Make Ahead & Storage Tips
• Pastry: The pastry dough can be made up to 3 days in advance and kept in the fridge wrapped tightly in cling film. It also freezes well for up to a month—just defrost in the fridge overnight before using.
• Baked tart shells: Once baked, the tart shells can be stored in an airtight container at room temperature for 2–3 days.
• Filled tarts: Once filled, the tarts should be kept in the fridge and enjoyed within 2 days for the best texture and flavour.
• Leftover filling: If you have any tiramisu filling left, spoon it into ramekins and top with cocoa powder for a quick no-crust dessert!

• Serve them with a shot of espresso or a glass of chilled Amarula for a luxe twist.
